This Green Tomato Sauce is much like a pesto (without the nuts) and makes the most of the sour flavor of un-ripe green tomatoes. Serve it with spaghetti, alongside chicken or fish or to top a baked potato or steamed vegetables.
Ingredients:
¼ cup mint leaves
¼ cup basil leaves
¼ cup Italian parsley leaves
¼ cup arugula
5 green tomatoes, diced
1 clove garlic, chopped
¼ cup extra virgin olive oil
Salt and pepper to taste
Combine mint, basil, parsley, arugula, garlic and green tomatoes in the bowl of a food processor. Pulse several times to combine. With the motor running, pour the olive oil through the feed tube
to blend into a chunky puree. Add cheese and pulse a few more times to incorporate in to the sauce. Add salt and pepper to taste.
